Gonna Get Wild

Together with some other girls I helped host a shower for a really special friend and Mommy-to-Be. The Watkins' and Ross's have been close family friends for a very long time. Ashley and I literally grew up with Jeff and Julie. Then we all went to Baylor, have married and now have all been blessed with babies. ESPECIALLY JULIE! She and her husband David are pregnant with twins. We had so much fun planning a shower based on how wild their house is going to be with 2 babies!

New Favorite Shower Recipe
(of course you don't have to have a shower to make them, they're so good)
Peanut Butter Banana Finger Sandwiches

Ingredients

  • 1/2 cup butter, softened, plus more for greasing
  • 1 1/2 cups all-purpose flour, plus more for dusting
  • 1 1/4 cups sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup buttermilk
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 2 large ripe bananas, mashed
  • 1/2 cup raisins
  • 1/2 to 1 cup creamy peanut butter
  • 1/2 cup chopped peanuts

Directions

Preheat oven to 350 degrees F. Butter and flour a 9 by 5-inch loaf pan.

In a large bowl, beat butter and sugar at medium speed with an electric mixer until creamy. Add eggs, vanilla and buttermilk, beating well.

In a small bowl, combine flour, baking powder, and baking soda. Slowly add to the wet ingredients. Add mashed bananas and fold in raisins. Pour into prepared pan and bake for 50 to 60 minutes. Let cool in pan 10 minutes. Remove from pan and let cool completely on a wire rack.

Cut banana bread into slices. Spread peanut butter over half of banana bread slices. Top with remaining slices to make a sandwich. Cut each sandwich into desired shapes or sizes. Roll edges in chopped peanuts and serve.

**I made Pioneer Woman's Banana Bread which is my favorite. It made 2 loaf pans.

Ashley made these cake ball which are unbelievable! Trying to get her to start a little business!
